Recent theoretical developments have positioned the study of energy correlators in collider experiments as a new tool to study jet substructure in pp collisions. We show, for the first time, how the study of energy correlators can provide crucial information on the study of jet substructure in heavy ion collisions and show that they provide a robust angular variable which has the potential to show experimentally the effects of color coherence in medium-induced splittings.
